Elizabeth's Summer Shower Salad

Elizabeth credits her friend, Krista, for this recipe, which is aptly named because it's absolutely perfect for baby showers...bridal showers...engagement parties...you get the idea. Serving it in individual take-out containers (available for purchase at restaurant supply stores or on Amazon) is Elizabeth's preferred presentation.

You can put your own spin on this recipe, too, adding or deleting anything you desire.

Summer Shower Salad
The perfect chicken salad for an occasion or a casual weeknight dinner. Use shredded rotisserie chicken meat for a shortcut. Make a day ahead and refrigerate overnight. Omit chicken for a vegetarian dish!

Ingredients

For the salad:
  • 1 box long grain & wild rice mix, cooked with or without seasonings
  • 1 lemon, juiced
  • 3 chicken breast halves, cooked and diced
  • 4 green onions, chopped
  • 1 red bell pepper, chopped
  • 2 cups peapods, ends removed and chopped into thirds
  • 1 large avocado, diced
  • 1 cup pecans, chopped
For the dressing:
  • 2 cloves garlic, minced
  • 1 tablespoon dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon sugar
  • 1/4 teaspoon pepper
  • 1/3 cup rice wine vinegar
  • 1/3 cup olive oil
Instructions

1) Combine dressing ingredients (garlic through olive oil) in a blender or in a mason jar. 2) Mix all salad ingredients except the avocado and pecans. Combine with dressing, toss, and refrigerate at least 2 hours or overnight. 3) Before serving, add avocado and pecans. Garnish with lettuce leaves, if you'd like. Serve in a large bowl, on a platter, or in individual take-out containers. Note: Cooking time is dependent on whether you need to prepare your chicken breasts. Using a rotisserie chicken or fully cooked chicken breasts from the grocery store is a good way to take a short cut on this recipe.
